SQIRL: Raspberry Cardamom Jam

Hidden behind a flowering pink tabebuia tree at the edge of Silver Lake in Los Angeles sits Sqirl. Since 2011 they’ve been making small-batch preserves on site, in copper jam pans, according to techniques developed in the 1500s. 

McGrath Family Farm grows only a small amount of raspberries as the variety they plant (Liberty) are highly perishable and also extremely fragile. Somehow the marriage of cardamom and raspberries is ying&yang it work- and so we preserve the two as a time stamp of the season.
